Come join us at Rice Vice, the new tasting room of Proper Sake - Nashville’s one and only sake brewery. In this class hosted by owner and master brewer Byron Stithem, you will learn about and enjoy a sampling of Proper Sake’s award winning sakes as well as a curated offering of imported sakes. Byron will also share about Nashville’s connection to Kanazawa, one of Japan’s most historic and well-preserved cities. And if that wasn’t enough, fun and playful snacks will be presented by Rice Vice’s regularly featured restaurant pop up Rini Konbini - the latest venture by Two Ten Jack chefs Trey Burnette and Jessica Benefield. Created out of a shameless obsession for Japanese convenience store food, Rini Konbini will introduce you to the world of Konbini Mart staples such as onigiri, sandos, mochi and more. This unique class is an educational culinary experience that will take your sake knowledge and love of Japanese food to the next level!

Byron Stithem

Byron Stithem is a lifelong student of the culinary and fermentation sciences. He is currently the owner/master brewer at Proper Sake Company in Nashville where he aims to bring sake to the masses one glass at a time. Proper Sake is a Nashville based sake brewery that specializes in pre-modern style sake productions and koji based ferments. We pride ourselves on brewing versatile sakes that pair well with nearly any style of cuisine or experience.

Trey Burnette & Jessica Benefield

Trey & Jessica are a husband + wife team who have a shared love for all things

food and travel. They were cooking Asian Fusion together when they first visited Japan and fell in love immediately; switching gears to a Japanese focus upon returning home. Opening Two Ten Jack in 2014 allowed for a culinary expression of their deep reverence for Japanese food and culture but didn't leave much room for the fun, playful snacks they love so much and ate daily from the Konbini Marts; hence the creation of Rini Konbini.
